I love using my essential oils but haven't played with them as spices in the kitchen much, well this is a winner. Easy (well except for all the chopping) if you have a food chopper use it.

My inspiration was this recipe by Dr. Axe.

My recipe is below.

Pico de Gallo

Ingredients

3 medium size tomatoes, diced

5 baby green tomatoes, diced (could use just another red tomato)

1/4 green pepper, diced

1/3 onion, diced

2 T organic Apple Cider Vinegar

½ tsp Garlic Powder

Salt & Pepper to taste

2 drops Cilantro essential oil

4 drops Lemon essential oil (could also use Lime essential oil)

Directions

1.         Combine all ingredients in a large bowl

2.        Stir to combine and chill for 2 hours

Now I didn't add any peppers but if you like spicy, then add a jalapeno..I would take out the seeds.

Enjoy!
